LAZIFIED CORNBREAD

1 1/2 cups White corn meal
2 tablespoons Sugar
2 tablespoons Baking powder
1 teaspoon Salt
1 1/2 cups Milk
1/4 cup Vegetable oil
2 Eggs, beaten

Preheat oven to 400 degrees. Grease skillet and heat in oven.

combine meal, sugar, baking powder and salt in large bowl. In a smaller bowl beat eggs, add milk and oil, and mix wet into dry ingredients. Pour into hot greased skillet. Bake until brown, about 25--30 minutes.

MRS. DINGLE'S VEGETABLE SOUP

From the legendary Tip Top Inn, which was at Pawley's Island, South Carolina until Hurricane Hugo swept it away.

2 pounds Soup bone with some meat
12 cups Water
1 cup Chopped, peeled celery
1 cup Chopped cabbage
28 ounces Canned tomatoes
1 cup Chopped onion
Salt & pepper

Cook bone in water about 1 hour. Add vegetables and cook 30 minutes. When meat is tender, remove from soup, take off bone and cut meat into small pieces. Return to soup, correct seasoning and serve to 12.

SHRIMP REMOULADE TRADITIONAL NEW ORLEANS STYLE

4 tablespoons Zatarain's ®TM Creole mustard
1 tablespoon Paprika
2 teaspoon Salt
2 tablespoons Red wine vinegar
6 tablespoons Olive oil
1/2 Celery heart, minced
1/2 White onion
1 clove finely chopped Garlic
1 tablespoon finely chopped parsley
1 pound Shrimp, boiled, cooled and de-veined (p. 86)


Mix mustard (Creole only, accept no substitutes---Zatarain's ®TM preferred), paprika, salt and vinegar. Add olive oil a little at a time and mix well. Stir in chopped celery, onion, garlic and parsley.

Put in a covered container and refrigerate overnight or for at least a few hours.

Serve over shrimp on a bed of lettuce with crackers or bread so all the sauce can be consumed. Serves 4.
