Though righteously Southern, Mama Susan teaches the basics of all cooking. This is an excellent learning cookbook, and is also well suited to accomplished cooks. Though we may think of healthier cooking as tasteless; Mama Susan has found ways to cut the fat content of traditional Southern cooking without compromising the home cooked taste we all love.
Chapters include cooking seafood, making homemade soups, and how to make sauces and condiments. Also featuring chapters on meat recipes and healthier preparation of vegetables, cooking rice properly, potatoes (Tater's for Jake.) pastas and gravies, and bountiful salads with delicious salad dressings. Breads including a multitude of cornbread recipes, tasty desserts and great food and drinks for parties.
"If you want to win friends and influence-people, learn to cook. Even if you don't want friends or influence, do yourself a favor and learn to cook. Anyone willing and able to feed the ravening hordes or even a single starving soul becomes the center of the universe, if only for a moment. If you know the basics and keep a fairly well-stocked kitchen, you are ready for whatever comes: a cold wave, unexpected guests, unexpected guests in a cold wave, or just one very interesting person who is so hungry that he might bolt and run to the nearest burger joint. It needn't happen. A simple home-cooked burger tastes better, is a thousand times better nutritionally, and the person who gets it thinks it's something special--because it is."
